SAPIN-SAPIN QUICK AND EASY RECIPE



SAPIN-SAPIN is one of the traditional Filipino snacks and considered as a dessert. Colorful layers of sticky rice with different flavors that compliment each other. Main ingredients are combination of rice and glutinous rice flour, coconut milk and sugar. Also you can use flavorings such as ube (purple yam) and langka. Famous toppings are latik (coconut curdle) as the oil aids slicing, but you can also use freshly grate coconut and cheese too.

FOR FULL RECIPE AND COOKING TIPS:

RECIPE:

1 1/2 CUP GLUTINOUS RICE FLOUR
1/2 CUP RICE FLOUR
1/2 CUP SUGAR
1/2 CUP CONDENSED MILK
400 ML COCONUT MILK
UBE FLAVORING (OPTIONAL)
LANGKA FLAVORING (OPTIONAL)
OIL FOR GREASING THE MOLDER
LATIK OR COCONUT CURDLE FOR TOPPINGS

Instructions
Prepare the latik in advance.
In a bowl combine all the ingredients: glutinous rice flour, rice flour, sugar and condensed milk.
Pour in the coconut milk and stir untill well blended.
Divide the mixture into three equal parts.
Add the food flavoring and coloring.
Grease the molder with oil for easy removal of the cake.
Pour the first batter into the 5″ molder and steam for 12 minutes.
You can also use puto molder for single serve.
Do the toothpick test. Once the toothpick comes out clean pour the next layer.
Continue until you finished the 3 layers.
Remove the cake and cool it completely before removing it to the molder.
Topped with latik and SERVE.
